I love sandwiches. And I love Fried Chicken. And I so love Fried Chicken Sandwich! So, each time I cook fried chicken for lunch or dinner, I make sure that I'll have some leftovers for my sandwich. If you have leftover fried chicken, you can easily make it into a gourmet-like sandwich, just like what I had yesterday, and last Monday, and a week before that. =)

I like my sandwich bread to be slightly toasted, always. Toasting the sandwich bread gives the sandwich added texture and flavor. And most of the time, expect for roast beef sandwiches and bacon and eggs, I like my sandwich fillings to be cold. So my tuna salad, chicken salad, AND fried chicken must be thoroughly chilled. Yes, even the fried chicken. I like it that way. But if you want to reheat your leftover fried chicken, or just want to make a sandwich out of your very hot, just-cooked-a-while-ago chicken, it's all up to you. It will be your sandwich, by the way.
So, here's what we need for a Fried Chicken Sandwich:
2 sandwich bread, white or wheat (I prefer wheat), toasted as you like 1-2 tbsp. mayonnaise 1 pc. fried chicken, deboned and cut into large pieces 1-2 lettuce leaf mustard, optional
Procedure: On a piece of bread, spread desired amount of mayonnaise. Place your desired amount of lettuce leaf, top it with the chicken pieces. Drizzle with mustard, or ketchup, if you like. I'll recommend you just add mustard and omit the ketchup, but it's your sandwich, you can do what you want :) Then of course you have to cover it with another sandwich bread. You can cut it into triangles for a more "sosy" look. hehe.
Sardinas is a very common thing for us, Filipinos, especially when we are on a tight budget or just simply lacked time to cook. Unfortunately, canned sardines are not as nutritious as freshly cooked fish. Like any other processed food, canned sardines have added preservatives and are high in sodium. Plus, the process of canning zaps down nutrients. So, how can we make our canned sardines healthier and yummier? All we need is a clove of garlic, an onion, sliced sayote, a cup of malunggay leaves and 10 minutes. We always have this Sauteed Sardines with Sayote and Malunggay as ulam. I so love it. I will share this recipe with you for that 10-minute "Sardinas night" wonder.
Ginisang Sardinas, Sayote at Malunggay
Ingredients: 1 or 2 cloves of garlic, crushed 1 onion, sliced 2 sayote (chayote), sliced thinly 1 cup malunggay (Moringa or Horse Radish) leaves 2 cans sardines salt and pepper to taste
Procedure: In a little oil, saute onion and garlic until cooked, add sayote. Stir fry for a minute or two until sayote is cooked. Add sardines, half a cup water, and the malunggay leaves. Season with salt and pepper to taste. Simmer until vegetables are cooked. Serve with rice.

This is really, really yummy and this recipe can feed 4-5 persons if you are going to serve it with rice. AND Malunggay is dubbed as the "miracle vegetable". It is full of vitamins and minerals like Iron and Vitamin C!
The very night that I read about the Salmonella Pistachio scare, the first thing I did was write an inquiry to the Consumer Advisory Service of Unilever Philippines regarding the Pistachios and Cashews flavor of Selecta Ice Cream. Really, I think I'm the first one who got scared to learn that there's Salmonella in Pistachio nuts and products. I love Pistachios and Cashew ice cream of Selecta. That's the only flavor that I consume for the past I don't know how many years. Unilever Philippines always answer my e-mails. And here is their response regarding MY Pistachio ice cream Salmonella scare:
Dear Ms. Guillermo,
Thank you for your inquiry regarding the subject. To get to the bottom of your queries here is our response.
1. We are confident that our products are not affected because of so many reasons: - We source our pistachio nuts from Sacramento California specifically from Blue Diamond and Houston nuts.
- What is very important is that these nuts prior to our use in ice cream, they are all roasted by a local supplier up to 325 degrees Celsius which will kill any micro organisms including salmonella.
- This local roasting process practically and clearly ensure that the pistachios we use for our ice cream variant is safe and fit for consumption. This in effect should de couple us from the current concern in US.
- Upon receipt of the locally roasted Pistachio nuts they are subjected to microbiological analysis which includes a test and check for salmonella.
- Prior to its use the roasted pistachios are properly preserved to avoid any contamination.
- All our ice cream finished products including the Pistachio ice cream variant are once more subjected to the same testing and analysis prior to its release to the market.
2. Further steps that we intend to take is to submit to BFAD a Positive Assurance notice that our Pistachio Ice cream variant is safe and has been microbiologically examined throughout the manufacturing process , ie from raw material receipt , roasting and finished ice cream product. We also intend to proactively submit this ice cream variant for BFAD validation test if warranted by the authorities.
Salmonella is a bacteria commonly found in the intestinal tract of animals such as rodents, poultry etc. and they usually transmitted through fecal droppings. Therefore this can be eliminated in the food manufacturing processes via the strict implementation of GMP ( Good Manufacturing Practice ) , HACCP ( Hazard Analysis Critical Control Points ) and proper storage and transport.

I'm really glad when I read this, I hurriedly ran to the grocery to buy myself a tub of Pistachios and Cashews Ice Cream from Selecta! Heaven.
Salmonella on Pistachios? This is really, really bad. Especially for my family. We love that green nut very much. For the past year, we've been ingesting tons of pistachios in form of ice cream! Then, we'll learn that pistachios have Salmonella?!! I don't know how many food items will be affected by this ";[#@##*& Salmonella thing!
The salmonella scare in pistachios started last week when FDA received calls from a couple of persons complaining about gastrointestinal discomforts associated with the nuts.
Salmonella, the most common cause of food-borne illness, causes diarrhea, fever and cramping. Most people recover, but the infection can be life-threatening for children, the elderly and people with weakened immune systems. If this Salmonella Pistachios scare is true, all I can say is, THIS IS REALLY NUTS!!!
